How to keep Excel headers repeating on every PDF page
A 200-row export with the header row only on page 1 is useless to a reader. Here is the manual fix in Excel, where it breaks, and how to automate it for wide tables.

Page Layout → Print Titles → "Rows to repeat at top". Click the row selector and pick row 1 (or whichever row holds your headers). Save the workbook. From now on every printed/exported page reprints those rows at the top.
